Anyway, when I asked Carol what I should bring she said "cake balls". I had never heard of these delightful little things .. I was skeptical! She told me how her friend makes them (anyone who knows Carol knows how she avoids the kitchen, she prides herself on this, so I don't want to give anyone the idea that SHE has actually made these LOL). So I had a basic idea, checked around on the internet and went to work. These things are soooo yummy and sooo fantastic!
There have been inapproiate, albeit funny, ball jokes for the last few days. I will say that my balls were very popular at the party and nobody could keep their hands off of them! Many complimented my balls, again and again. :)
So, I know you will all ask for this evil little recipe. I say evil cause they are sooo good you just keep going back for more.
Make a cake, just like usual. Cool for 20 minutes and then crumble. Add frosting and stir (I used a mixer for the crumbling and mixing in the frosting). Many recipes say to use a full can of frosting but Carol told me her friend uses 3/4 of a container. I found that the Lemon cake and cream cheese frosting the whole can was best. The cherry chip cake and chocolate frosting about 3/4 of the can was appropriate.
When fully mixed line a cookie sheet with wax or parchment paper and use a small ice cream scoop, melon baller or your hands to form small balls. Freeze. Many recipes online say 3-6 hours and vary greatly. I actually froze them overnight cause I had better things to do LOL
You will want to use almond bark (found at walmart, and nowhere else here) or some other candy coating. Melt it down and dip your balls. Return them to the wax or parchment paper to set. If you want to add anything to them do it right after you dip. I added sprinkles, crushed nuts, toasted coconut or a second flavor of candy coating in a swirl. Be creative, have fun. No matter how they look they will be soooooo delicious!

ReplyDeleteWe played Whoonu too and that was really fun! Then Gayle and April left and it went downhill. I'm not sure how this GIANT mess happened but you should see my house. Looks like a bunch of teenagers were partying in here! Then Beth and Heather started eating the cheeseball and Kathy was yelling at them to stop. Finally she's like "I don't even care about the animals you're harming anymore, just PLEASE don't eat the CHEESE!!! I'm worried about your digestion on the 1/2 hour ride IN MY CAR!!" It was so funny.

ReplyDeleteI did not serve them eggs lol, I took cake balls, they are responsible for their choices lol I can't help they are so good they make vegans eat eggs!
